Sunflower Seed Butter Rice Cakes - Simple, Crunchy, and Satisfying

Prep Time 5 minutes
Total Time 5 minutes
Servings: 4 servings

Ingredients

  • Plain rice cakes (regular or brown rice)
  • Sunflower seed butter (stirred, no added sugar if possible)
  • Honey or maple syrup
  • Fresh fruit: banana, strawberry, or apple (optional)
  • Chia seeds or hemp seeds (optional)
  • Dark chocolate chips or a square of dark chocolate (optional)
  • Cinnamon (optional)
  • Flaky sea salt
  • Lemon juice (optional, for sliced apples)

Method

  1. Prep the base: Lay out your rice cakes on a clean plate. If your sunflower butter is stiff, stir it well to make it smooth and spreadable.
  2. Spread generously: Add 1 to 2 tablespoons of sunflower seed butter to each rice cake. Aim for even coverage, all the way to the edges for better crunch in each bite.
  3. Sweeten lightly: Drizzle a little honey or maple syrup on top. A light zigzag is enough—about 1 teaspoon per rice cake.
  4. Add toppings: Choose your vibe: Fruity: Add sliced banana or strawberries. For apples, toss slices with a squeeze of lemon so they don’t brown.
  5. Seedy: Sprinkle chia or hemp seeds for texture and extra nutrition.
  6. Chocolate: Add a few dark chocolate chips or shave a bit of a chocolate square over the top.
  7. Warm spice: Dust with cinnamon for cozy flavor.
  8. Finish with salt: Add a tiny pinch of flaky sea salt. It sharpens the sweetness and lifts the nutty flavor.
  9. Serve right away: Enjoy immediately for the best crunch and clean layers of flavor.
