Prep the glass: If you like a sugared rim, rub a lime wedge around a tall glass and dip the rim in coarse sugar.
Set aside.
Peel and slice the kiwi: Use one ripe kiwi per drink. Slice into rounds or chunks, reserving a slice for garnish.
Muddle the fruit and mint: In the glass, add 5–6 mint leaves, 3–4 kiwi chunks, 1 ounce simple syrup, and the juice of half a lime (about 3/4 ounce). Gently muddle 3–5 times—just enough to bruise the mint and break up the kiwi slightly.
Add rum: Pour in 2 ounces of white rum.
Stir to combine the flavors.
Ice and top: Fill the glass with ice. Top with 3–4 ounces of club soda. Give it a quick stir to lift the muddled mixture from the bottom.
Garnish: Add a fresh mint sprig, a kiwi slice, and a lime wheel if you’d like.
Serve with a straw for easy sipping.
Taste and adjust: If you prefer it sweeter, add a splash more simple syrup. For extra tang, squeeze in more lime.
