Heat the liquid: In a medium pot, bring water or broth to a boil. Stir in salt and olive oil or butter.
Add the rice: Stir in the Minute Rice. Remove from heat, cover, and let sit for the time stated on the package (usually 5 minutes for white, 10 minutes for brown).
Fluff it: Uncover and fluff rice gently with a fork to separate the grains.
Add flavor: While still warm, fold in lime zest, lime juice, cilantro, and black pepper.
If using garlic or green onion, add them now.
Taste and adjust: Add a pinch more salt or extra lime juice if you want brighter flavor. Serve warm.
