Chia Seed Pudding With Almonds and Berries – A Simple, Satisfying Breakfast

Ingredients
  

  • Chia seeds
  • Unsweetened almond milk (or your preferred milk)
  • Vanilla extract
  • Maple syrup or honey (optional)
  • Pinch of salt
  • Fresh berries (strawberries, blueberries, raspberries, or a mix)
  • Almonds (sliced, slivered, or chopped)
  • Optional add-ins: ground cinnamon, lemon zest, shredded coconut, yogurt

Method
 

  1. In a medium bowl or jar, whisk together 1 cup unsweetened almond milk, 3 tablespoons chia seeds, 1 teaspoon vanilla extract, 1–2 teaspoons maple syrup or honey (to taste), and a pinch of salt.
  2. Whisk well for 20–30 seconds to break up any clumps. Let it sit for 5 minutes, then whisk again. This second stir prevents gritty pockets.
  3. Cover and refrigerate for at least 2 hours, preferably overnight, until thick and pudding-like.
  4. Before serving, stir the pudding to smooth it out. If it’s too thick, add a splash of milk; if too thin, stir in 1 teaspoon more chia and let it sit 10 minutes.
  5. Top with a generous handful of fresh berries and a small handful of almonds. Add an extra drizzle of sweetener if you like.
  6. Optional: Layer pudding, berries, and almonds in a jar for a parfait-style breakfast.
