Preheat your oven to 450°F (230°C).
Place a rack in the middle. Lightly oil a large baking sheet or line it with parchment.
Let the dough rest at room temperature for 20–30 minutes if it’s cold. This makes it easier to stretch without snapping back.
Stir together the melted butter, minced garlic, salt, pepper, and paprika.
Set aside.
On a lightly floured surface, press and stretch the dough into a rectangle about 10x14 inches. Transfer to the prepared baking sheet.
Brush the dough with half of the garlic butter, going all the way to the edges for flavor.
Sprinkle on the mozzarella and cheddar evenly. Top with jalapeño slices.
Finish with the Parmesan.
Bake for 12–15 minutes, until the cheese is bubbling and the edges are golden.
Brush the remaining garlic butter over the hot breadsticks. Let them rest for 2–3 minutes to set the cheese.
Garnish with chopped cilantro or parsley if you like. Slice into sticks using a pizza cutter and serve with ranch or marinara.
