Blueberry Mojito Cocktail - Bright, Bubbly, and Refreshing

Ingredients
  

  • Fresh blueberries (a small handful, about 1/4 cup)
  • Fresh mint leaves (8–10 leaves, plus a sprig for garnish)
  • Lime (1 lime: half for juice, half for wedges)
  • White rum (2 ounces)
  • Simple syrup or sugar (1/2–3/4 ounce, to taste)
  • Club soda or sparkling water (to top)
  • Ice (crushed or cubed; crushed is classic)
  • Optional: a pinch of salt to enhance flavor

Method
 

  1. Add the blueberries and simple syrup to a sturdy glass. Gently muddle until the berries release their juices and form a vibrant base.
  2. Tear the mint leaves once or twice to release oils, then add them to the glass. Lightly press with the muddler a few times. Don’t grind the mint—over-muddling makes it bitter.
  3. Squeeze in the juice of half a lime. Toss in a couple of lime wedges for extra zing.
  4. Add the rum and a small pinch of salt if using. Stir to combine.
  5. Fill the glass with crushed ice. Top with club soda and give it a gentle stir to lift the blueberry-mint mixture from the bottom.
  6. Garnish with a mint sprig and a few whole blueberries. Serve with a straw so you can sip through the fruit.
