Blackberry Thyme Vodka Cocktail - Bright, Herby, and Refreshing

Ingredients
  

  • For the Thyme Simple Syrup: 1/2 cup granulated sugar
  • 1/2 cup water
  • 6–8 fresh thyme sprigs
  • For the Cocktail (1 serving): 2 ounces vodka
  • 3/4 ounce fresh lemon juice
  • 3/4 ounce thyme simple syrup
  • 6–8 fresh blackberries (plus extra for garnish)
  • Ice
  • Optional: splash of soda water or dry tonic
  • Garnish: fresh thyme sprig and a lemon wheel

Method
 

  1. Make the thyme syrup: Add sugar, water, and thyme to a small saucepan. Bring to a gentle simmer, stir until sugar dissolves, then turn off heat. Let it steep 10 minutes, strain, and cool.
  2. Muddle the berries: In a cocktail shaker, add blackberries. Gently muddle until juicy but not pulverized to seeds.
  3. Add the base: Pour in vodka, lemon juice, and thyme syrup. Fill the shaker with ice.
  4. Shake hard: Shake 10–12 seconds until the shaker is frosty. This chills and slightly dilutes for a smoother sip.
  5. Strain: Double strain into a chilled coupe for a smooth finish, or strain over fresh ice in a rocks glass for a more relaxed serve.
  6. Optional fizz: Add a small splash of soda water or dry tonic if you want it lighter and spritzy.
  7. Garnish: Add a thyme sprig, a few blackberries, and a lemon wheel. Serve right away.
