Berry Fruit Parfait Recipe - A Bright, Fresh, and Easy Treat

Ingredients
  

  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries, blackberries)
  • 2 cups Greek yogurt (plain or vanilla)
  • 2–3 tablespoons honey or pure maple syrup
  • 1 teaspoon vanilla extract (skip if using vanilla yogurt)
  • 1 cup granola (your favorite kind)
  • 1 tablespoon lemon juice (optional, brightens the berries)
  • 1 teaspoon lemon zest (optional)
  • Pinch of salt (optional, enhances flavor)
  • Fresh mint for garnish (optional)

Method
 

  1. Rinse and pat dry the berries. Slice strawberries if using. If your berries are very tart, toss them with lemon juice and a teaspoon of honey. Let sit for 5 minutes to get juicy.
  2. In a bowl, stir together the Greek yogurt, vanilla, and honey or maple syrup until smooth. Taste and adjust sweetness.
  3. Choose your serving glasses or jars. Clear glasses show off the layers nicely, but any bowl works.
  4. Spoon a layer of yogurt into the bottom. Add a layer of berries. Sprinkle a small handful of granola on top.
  5. Repeat the layers: yogurt, berries, granola. Finish with berries on top for color.
  6. Garnish with lemon zest and a leaf of mint if you like. Serve right away for the crunchiest texture.
