Ingredients
  

  • Bread: 2 slices of sourdough, country white, or whole grain
  • Mozzarella: 3–4 ounces, sliced or shredded
  • Avocado: 1/2 ripe avocado, sliced
  • Tomato: 2–3 slices, preferably Roma or beefsteak
  • Butter: 1–2 tablespoons, softened (or mayonnaise for spreading)
  • Olive oil: 1 teaspoon (optional, for extra crispness)
  • Seasonings: Salt, black pepper, and a pinch of dried basil or Italian seasoning
  • Optional add-ins: Fresh basil leaves, red pepper flakes, garlic powder, or a drizzle of balsamic glaze

Method
 

  1. Prep the bread: Spread butter on one side of each slice. For extra crisp edges, use a mix of butter and a light brush of olive oil on the skillet.
  2. Layer smart: Place one slice butter-side down. Add half the mozzarella, then the tomato slices. Sprinkle with salt, pepper, and a pinch of basil. Add avocado slices, then the remaining mozzarella. Top with the second slice, butter-side up.
  3. Control the heat: Warm a skillet over medium-low heat. A gentle heat helps the cheese melt without burning the bread.
  4. Grill slowly: Place the sandwich in the skillet. Cook 3–4 minutes per side, pressing lightly with a spatula, until the bread is golden and the cheese is melty.
  5. Rest and slice: Let the sandwich rest for 1 minute off the heat to set, then slice diagonally. Add fresh basil or a tiny drizzle of balsamic if you like.
  6. Serve: Pair with a simple green salad, tomato soup, or just enjoy it on its own.
